The process begins with food rescue, where surplus food is recovered from producers, retailers, and partners before it is lost. This step is critical in reducing food waste while redirecting resources to communities facing food insecurity.

Once recovered, all products undergo a classification and sorting process. At this stage, food is evaluated based on type, condition, and suitability for consumption. This ensures that only appropriate products continue through the system.

A key pillar of this work is food safety (inocuidad alimentaria). Every item is reviewed under defined quality criteria to ensure it meets safety standards for human consumption. This includes visual inspection, handling protocols, and storage conditions that preserve nutritional value and prevent contamination.

After classification and quality control, food enters the distribution phase. Through coordinated food logistics systems, products are organized and delivered to partner organizations and directly to communities. This process ensures timely and equitable access to food, especially in areas where availability is limited.

Over the past eight years, our Food Bank has strengthened these operational systems to improve efficiency, traceability, and reliability. Our experience in the field confirms that effective food assistance depends on structured processes, not isolated actions.
